A few years ago I shared a recipe for my secret ingredient black bean brownies (Linked Here) and I felt like it was time to try a new secret ingredient brownie recipe. This recipes secret weapon: Sweet Potatoes! High in Vitamin A, B5, B6 and C, potassium and fibre, sweet potatoes are incredibly versatile. Here is a yummy and chocolatey brownie recipe chock full of sweet potato nutrients.
- 3/4 cup of mashed sweet potatoes
- 1/2 nut butter (I used peanut butter)
- 1/2 cup of cacao powder
- 1 cup of coconut sugar
- 1/3 cup of flour (I used Bobs Red Mills Gluten Free Flour)
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/2 cup of chocolate chips or chocolate chunks
Preheat your oven at 350 and mix al your ingredients in a bowl, folding in the chocolate chips/chunks at the end.
Spread into a 9X9 baking dish, and bake for 40 minutes. Let it cool for at least 15 minutes and enjoy!!
