Motivation Monday Featuring Valentina Marchei

Lutzofgreens is excited to launch a new project, Motivation Monday. We will have a feature athlete every Monday. This week we are excited to welcome 2-Time Olympian Valentina Marchei of Italy who shares with us her favorite vegan recipe!

Vegan Muesli flavoured with Pistachio, Coconut and Chocolate

This recipe is good for breakfast and also as a snack between practices or in the afternoon.

It’s yummy and healthy, it is well balanced in all the micro-nutrients (vitamins and minerals) and all the macro-nutrients (carbs, proteins and fatty acids).

You can have the muesli with yogurt or simply in a bowl of milk (the type you prefer)

Ingredients

  • 500g of oat flakes
  • 100g of dreid fruit like pistachio, almonds or nuts
  • Raisins as much as u want
  • 100g of grated coconut
  • 2 spoons of dark bitter chocolate
  • Salt q.b.
  • 100ml of maple syrup
  • 80ml of Water

How To Prepare

Put in a bowl first all the dry ingredients and then add water and maple syrup. One you have mixed it up, once you are done spread it on a pan and cook it in the oven (temperature 180celsius). Every ten minutes turn the muesly around with a spoon so it cooks evenly.

Once done, let it cool down completely and if u want add extra 50g of chocolate chips.

If you don’t eat all of it you can keep it closed in a jar. It can last up to 2 months!

This is my recipe version of the muesly, the classic one includes also honey, but I like it less sweet. Usually instead of water you could use 40ml of seed oil. For a more proteic version you can add 40g of tahini, while for a more yummy version you could exceed with the chocolate chips!
