Delicious Homemade Pierogis

When I was pregnant, I realized that I had a newfound love …. with pierogis! My cravings extended beyond pregnancy and pierogis have now become a staple of my diet. I can’t believe I never ate them once since becoming vegan. After finding extra time on my hands this week, I thought it would be a fun challenge to make homemade pierogis! The process was surprisingly easier than I expected and much tastier then anything I ever bought in a store.

So let’s get started!


For Dough:

  • 2 cups of all-purpose flour
  • ½ teaspoon of salt
  • 2 teaspoons of olive oil
  • ½ cup of water (And extra water to help smooth the dough as needed)

For Filling:

  • 2 cups of potatoes – cubed
  • 1 onion- diced
  • 2 teaspoons of olive oil
  • ½ teaspoon of salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of cumin
  • ½ a package of beyond the meat ground beef
  • ¼ cup of vegan cheese shreds


Step One: Make your pierogi dough. Combine flour, salt, olive oil and water in a large bowl. Use your hands to kneed the dough until everything is mixed together. If it gets to dry, add a little bit more water. You want a smooth dough. Form your mixture into a ball and dust it with flour. Cover your bowl and put the dough in the fridge to chill for about one hour.

Step Two: Make your filling. Start by boiling your potatoes until they are soft enough to mash. In a large frying pan, cook your onion in a little bit of olive oil on medium and add your ground beef. Cook this for about 3-4 minutes. Add in your potatoes and spices and let it cook for another 5 minutes. Mash your potatoes with a potato masher and remove the mixture from the heat and let it cool.

Step Three: Shape your pierogis. Roll out your dough on a floured surface and cut out large circles with a cookie cutter or a sharp knife. Add about 2 teaspoons of filling to one half of each circle, folding over the other half. Press the dough together tightly and repeat until all the dough is used up. This should make between 25-30 pierogis.

Step Four: Boil pierogis! Bring a pot with water to boil and add your pierogis. Let them cook until they float to the top. This should take a few minutes. Drain them afterwards.

Step Five: Pan Fry those bad boys!! Heat up that frying pan you previously used on medium heat with olive oil and pan fry your pierogis until they are golden brown and slightly crispy.

And there you go. You have amazing pierogis and a ton of dishes to do! Enjoy!
