Caesar Pasta Salad

These summer days have been hot and turning on the oven to cook seems like the last thing I feel like doing. But then, I came across a recipe for a cold summer pasta salad from Rabbit and Wolves. I never made homemade croutons before so that seemed like a fun challenge. I ended up adapting this recipe to fit my needs and to make it even healthier and tasty. Give it a try for your next picnic or potluck dinner. The recipe was supposed to make 6 servings but my husband and I ate it all in one dinner. Oops. It is just that good.

Ingredients for Croutons

  • 1 loaf of bread (I used a thick multigrain sourdough)
  • 4 tablespoons of olive oil
  • 3 tablespoons of nutritional yeast
  • 1 teaspoon of garlic
  • A sprinkle of salt

Ingredients for Dressing

  • 1/2 cup of vegan mayo
  • 2 teaspoons of Dijon mustard
  • 1/2 tablespoon of capers
  • Juice from 2 lemons
  • 3 tablespoons of nutritional yeast
  • 1 teaspoon of garlic
  • A pinch of salt and pepper

Other Ingredients

  • 4 cups of cooked pasta (I used quinoa pasta)
  • 4 cups of chopped kale and spinach
  • 2 diced avocado

Start by cooking your pasta according to the directions on the package. Once it is cooked, drain it and rinse with cold water, and let it set to cool down. Keep rinsing it with cold water every 5 minutes so it doesn’t start to stick together.

When the pasta is cooling, you can make your croutons. Preheat the oven to 375 and cut your bread into cubes. Put your bread cubes in a mixing bowl, and drizzle olive oil on the bread cubes and pour the nutritional yeast, garlic and salt onto it as well. Toss and stir the bread cubes so they can be completely covered in the spices and olive oil.

Spread it all out on a baking sheet covered in parchment paper and cook for 20 minutes in your heated oven.

While your croutons are baking, make the dressing. Add all the ingredients into a blender and mix it well. It will be a slightly thick dressing.

When the croutons are done cooking, in a large mixing bowl, mix the pasta, kale, spinach and avocado. Add in the croutons, and than add the dressing. Best served immediately.
