A great dish made with only a few ingredients that you can find in your regular pantry and fridge. I really liked this recipe from the Simply Vegan Blog. I used more tofu, so I doubled everything in the recipe so this is what I came up with. If you want to make less, cut everything in half.
Step 1: Make General Tso Tofu
- 4 tablespoons soy sauce
- 2 tablespoons apple cider vinegar
- 9 tablespoons of cornstarch
- 2.5 cups of cubed tofu
- 2 cloves of minced garlic
Mix soy sauce and vinegar in a bowl and add tofu cubes. Let it sit and marinate for about 3-5 minutes. Drain the tofu mixture and transfer 1/3 of the tofu into a Ziploc baggy and add about 1/3 of the cornstratch. Toss this so the cornstarch coats the tofu. Do this with the rest of the mixture, 1/3 at a time.
Heat a skillet on medium to high heat and add some olive oil and the tofu. Stir the tofu frequently and cook until it is golden brown. Once a light brown colour has appeared remove the tofu into a bowl and set aside.
Step 2: Make the General Tso sauce
Add your garlic into the skillet and cook for about 1 or 2 minutes, stirring frequently.
While this is cooking, make the sauce with the following ingredients:
- 6 tablespoons of soy sauce
- 6 tablespoon apple cider vinegar
- 3 tablespoons vegetable stock
- 3 tablespoons coconut sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon of cayenne spice
Add the sauce into your skillet with the garlic and stir frequently until it thickens. Add your tofu and cook for another 2 minutes.
Step 3: Create your bowl
I added my tofu onto a base of quinoa and brown rice and stemmed broccoli. You can choose your bowl creation.
