Christmas Morning Baked French Toast

This pear and cranberry French toast dish is not only festive to look at, it’s also delicious and easy to make! The combination the sweet and tender pears and the tart cranberries goes perfectly together.

The Heart of a Baker shared this recipe on their website, and I knew I had to try to make my own version of it. This dish can be prepared within 15 minutes on Christmas morning. If you are expecting a big group of Christmas brunch visitors, doubled the dish and put it in a bigger baking dish. But for 2-4 people, this size works well.

Preheat the oven at 400F and grease a medium sized square baking dish. 9X9 works well.

In a small bowl, whisk together the following:

  • 1 cup of almond milk
  • 1/3 cup of quinoa flour
  • ½ cup of maple syrup
  • 1 teaspoon vanilla
  • 2 teaspoons of cinnamon
  • 1.5 teaspoon of nutmeg

Next, line your greased baking dish with the following:

  • 4-5 pieces of sourdough bread (I used spelt sourdough)
  • 2 chopped pears (Skin on, as that’s where the majority of nutrients are)
  • 3/4 cup of cranberries

Make sure to spend the bread evenly on the bottom of the pan, and space out your pears and cranberries.

Pour your almond milk mixture overtop of the base you have created. I sprinkled maple flax seeds over the mixture at the end. Bake it for 25 minutes, until the top of golden in colour and the bread is slightly crunchy. Let it cool slight but it’s best to eat it when it’s warm. Enjoy!!
