Pumpkin Pie Green Monster Smoothie

In our last installment of the mini “pumpkin series”, I wanted to share with you my version of an Autumn Green Smoothie. As you may have figured out by now, I love pumpkin. Pumpkin anything. So I figured, why not try to combine it with some healthy greens?

Spinach is full of calcium, iron, magnesium, potassium, Vitamin C and on top of that all, it is a natural anti-inflammatory and filled with fibre.

Popeye knew a thing or 2, as we could all use a little bit more spinach in our diets!

So get out your favourite blender, throw these ingredients into it, and voila. You have a hearty green smoothie that tastes like a slice of pumpkin pie!

  • 2 small ripe bananas
  • 1/4 cup pumpkin puree (Again, not pumpkin pie filling. Use the real stuff)
  • 1 cup of frozen spinach (Organic please, Spinach is a “dirty” vegetable)
  • 1/4 cup of light coconut milk (The kind in a can)
  • 1/3 cup of milk alternative
  • 1/2 teaspoon cinnamon
  • 1 sprinkle of ginger
  • 1 sprinkle of nutmeg
  • 1 teaspoon of chia seeds

Mix that all up until it is smooth. You can always add extra milk alternative if you find it to thick.

And now you have a smoothie perfectly suited for Halloween! Green and spooky with a hint of pumpkin!
