Energy balls are a quick and nutritious snack for anyone, and they are easily made gluten-free, dairy-free and if you wish, even nut-free.
This recipe of Apricot Energy balls comes together in just 15 minutes and it’s loaded with nutrients. Dried apricots are a surprising source of plant-based iron, as well as being high in fibre, Vitamin A and C and potassium. I used organic dried apricots, which is why they appear to be brown in the photo. They are not as bright orange as non-organic dried apricots because they don’t have any artificial flavoring or coloring added to them.
Simply put all the ingredients into a food processor and pulse it for a few minutes until everything is combined. You don’t need any sugar for these energy balls as they have natural sweetener in the apricots.
- 1.5 cups of dried apricots
- ½ cup raisins
- ¼ cup almonds
- ¼ walnuts
- 3 tablespoons of unsweetened coconut flakes
- 1 tablespoon flax seeds
- 1 tablespoon chia seeds
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla
Add the vanilla after the dry ingredients have been pulsed for a few minutes in the food processor. Once you add the vanilla, mix well. Roll the dough into balls, it should make about 12 balls. I also rolled my balls in more unsweetened coconut flakes for an added touch, but this is not necessary. You can store these balls in an airtight container in the fridge for several weeks. Enjoy!
