I used to love tuna sandwiches, I loved the mayo smothered tuna in between two pieces of thick white bread. To me now, this sounds disgusting. Canned fish? Mercury poisoning? White bread? Not my cup of tea. But, I do miss tuna sometimes. When I read online that mashed up chickpeas can be used as a replacement for tuna, I had to give it a try. What I discovered was an amazing bowl, or sandwich if you’d like, of something that looked, and kind of even smelled like tuna, but was filled with the healthy protein, fibre and minerals of chickpeas, and various other vegetables.
- 1 can of chickpeas
- 2 green onions
- ½ cup of peas (or you could use corn)
- ½ cup of chopped kale (or you could use spinach)
- 3-4 tablespoons of vegan mayo
- 1 tablespoon of lemon juice
- 1.5 tablespoons of nutritional yeast
- Pinch of salt and pepper
- Sprinkle of Daiya shredded cheese as you wish
Drain and rinse your chickpeas very well. Put them in a bowl and mash them up with a potato masher. It’s quite difficult, but it’ll get there.
Add the rest of your ingredients and mix well. If you want it to be creamier, add more vegan mayo.
You can spread this mix between two piece of ancient grain bread, or just mix it together in a bowl and eat it like a salad. Be careful, it is highly addictive! I had it for 4 days in a row a couple of weeks ago, I just couldn’t get enough, and it is so easy to make.
